Our Approach
Our goal is to bring you the most flavourful cup of coffee we can, accompanied by some of the Valleys freshest food. We want to create a place where you can gather with friends and family after a day of hiking in the mountains, or being out on the water.
By sourcing in-season coffee beans from exceptional producers around the world and roasting it right here in downtown Courtenay, we ensure our coffee will exceed your standards. We support local, and that means opting for quality over price, and ethics over ease. When our only option is to buy our green coffee from other countries, we are sure to go to the small, independent family-run farms, and support local the world over. Buying from the smallest farms means the largest impact, buying organic and sustainable means a healthy earth, and roasting them in the valley means fresh coffee!

Meet the Team
Dale McVeigh
Dale is a retired RCAF Veteran of 34 years joining as a CRS tech in 1986 eventually retiring as an AVS tech Reserve working for the Employment training standards for 407Sqn heading up the Apprentice training program for 7 years. Wanting to join the entrepreneur ranks after his service he saw an opportunity to be a Bistro owner and Coffee Roaster. Buying Rhodos Coffee and Bistro, with his wife Shannon in December 2019 just prior to the global pandemic Dale and Shannon managed to keep the doors open every day throughout and grow the wholesale coffee side of the operation, while creating a new space for guests to enjoy all day breakfast or lunch.
Shannon Champagne
Shannon's background originally was in Early Childhood Education, graduating from Malaspina College in 1993. She managed the toddler programs at "Katie's Korner Day Care" in Nanaimo eventually opening and operating her own Day care called, "Small World Daycare" in Ladysmith for 10 years. After marrying and moving to the Comox Valley Shannon managed cleaning operations for "Nelson Roofing and Sheet metal" for a further 10 years prior opening Rhodos Coffee and Bistro with Dale.
